The Coffee That Took the World by Storm
Dalgona coffee exploded in popularity worldwide and for good reason — it looks stunning, tastes indulgent, and requires just three ingredients you likely already have. Named after a Korean honeycomb toffee candy it resembles, Dalgona coffee is essentially a whipped instant coffee foam layered over cold or hot milk. It's easy, satisfying, and genuinely impressive to serve.
Ingredients (Serves 1)
- 2 tablespoons instant coffee (granulated, not ground)
- 2 tablespoons white sugar
- 2 tablespoons hot water
- 200ml milk (dairy or plant-based — oat milk works especially well)
- Ice cubes (for the iced version)
Equipment
- A medium bowl
- A hand whisk, electric hand mixer, or milk frother
- A tall glass
- A spoon for serving
Method
- Combine the three ingredients. Add instant coffee, sugar, and hot water to your bowl. Use equal parts of each — the ratio is crucial for the foam to form properly.
- Whip until stiff peaks form. Using a hand mixer, this takes about 2–3 minutes. By hand whisk, plan for 8–10 minutes of vigorous whisking. The mixture should be pale, thick, and glossy — similar to whipped cream in texture.
- Prepare your glass. For an iced version, fill a tall glass with ice and pour in cold milk. For a hot version, warm your milk and pour it in directly.
- Spoon the foam on top. Dollop the whipped coffee generously over the milk. It will sit on top in a beautiful cloud.
- Stir before drinking. Mix the foam into the milk as you drink, or stir it all together — either way, it's delicious.
Tips for Perfect Dalgona Every Time
- Use instant coffee, not espresso powder: Regular espresso or ground coffee won't whip to the same foam. Instant coffee's soluble proteins are what create the structure.
- Use a clean, dry bowl: Any fat or moisture can prevent the foam from forming properly.
- Adjust sweetness: Reduce sugar slightly if you prefer a less sweet drink — but don't eliminate it entirely as it helps stabilise the foam.
- Try flavoured variations: Add a pinch of cinnamon or cardamom to the whip, or swap regular sugar for brown sugar for a caramel note.
Vegan & Dairy-Free Version
Dalgona coffee is naturally dairy-free as long as you use plant-based milk. Oat milk is the top recommendation for its creamy texture and neutral flavour. Coconut milk adds a subtle tropical sweetness, while almond milk keeps it light. All work beautifully with the whipped coffee foam.
Serving Suggestions
Dalgona coffee pairs wonderfully with light, buttery pastries — a croissant, shortbread, or a slice of banana bread. Dust the foam lightly with cocoa powder or cinnamon before serving for an extra-elegant presentation. It also makes for a wonderful afternoon treat when you want something café-quality without leaving home.
